Pink Salt Cheese Cream

  1. Whisk cream cheese, milk, sugar and a pinch of pink salt until smooth.
  2. In a separate bowl, whip the double cream to soft peaks.
  3. Fold together until silky and thick but pourable.
  4. Adjust with a little milk if needed.
  5. Chill briefly before assembling.

Assemble the Drink

  1. Steep 1 Sun Moon Lake pyramid tea bag in 150ml hot water.
  2. Sweeten to taste and brew for 3–4 minutes.
  3. Fill a glass with ice and pour the tea over, leaving room for the cream.
  4. Stir to cool.
  5. Spoon over the pink salt cream.

Sip layered or gently stir to combine.

• Cane sugar highlights the tea’s natural sweetness. Brown sugar deepens the overall profile.
• This pink salt topping also pairs well with Red Jade and Royal Afternoon tea bags.
• Do not overbrew, as the tea is naturally full-bodied.
• If you don’t have pink salt, you can use regular table or rock salt. Use a little at a time and adjust as needed.
